Recipe 13: Ultimate! Superfood Vegan Matcha Cake

How can I start? It is so tasty and easy to make. It uses 4 superfoods and ultimately it is a Vegan cake!

Probably you know that the basis of healthy living is to continue a balanced diet over the long term while paying attention to nutritional value. With the latest food trends, the boundaries between supplements and foodstuffs are becoming even more blurred, and there is a growing demand for foods that boost immunity, that are physically and mentally healthy, and foods that are nutritious. The term "superfood" has also taken hold, and in addition to new superfoods, the spotlight is also on old-fashioned staples such as matcha, kombu and chickpeas.

Veganism is attracting attention in time with the earth's environmental problems. There have also been reports that the vegan population in the UK rose to 1.16% of the total population in 2018, and the vegan population in the US  increased six-times  in the three years since  2014. You may want to pursue a healthy lifestyle and are also interested in the sustainability of the earth, but vegan recipes are too limited in ingredients and you do not know what you can make, this is the first recipe you should try;

 Superfood Vegan Matcha Cake

As the name indicates, there are as many as four popular superfoods in the ingredients. Moreover, it is easy and delicious, and it is guaranteed that it is a cake that you want to eat every week!

First of all, an introduction of the superfoods used in the recipe.

Coconut oil: Coconut oil, classified as medium chain fatty acids, is known as 'slimming oil' because it is sublimated using fat in the body. It is recommended to purchase unrefined, additive-free and non-thermal extraction products.

Almonds: Rich in dietary fiber and vitamin E.  Maintains beautiful skin and prevents aging.

Matcha: In addition to various vitamins and minerals, catechin is the main clue. Its effects have attracted worldwide attention, including antioxidants, antivirals, anti-cancer, and reduced blood sugar and cholesterol.

Maquiberry: A fruit similar to blueberries that has climbed to number one in the "Top 10 Trend Forecast Beauty Superfoods  rankings for the second half of 2018" released by the Japan Superfood Association. It has the effect of cutting off antioxidants. Maquiberry Powder, the latest trend, is easily available through mail order.  If you like raw fruits, you could replace it with fresh blueberries.

Ingredients:

60g Coconut oil melted

230ml almond milk (any plant-based milk)

2 tbsp lemon juice, 8 tbsp maple syrup

1tsp vanilla essence

150g ground almond and 150g plain flour

2 heaped tsp bicarbonate soda,

1.5 tsp matcha

2 tbsp strawberry jam and 400g tin of full fat coconut milk for frosting

Sprinkle Maquiberry powder or fresh blueberries (optional)

Steps:

Preheat the oven at 180℃. Line a 18cm sandwich tin with grease proof paper.

  1. Add the milk to the melted coconut oil.
  2. Add all liquid ingredients and the ground almond. Stir well.
  3. Shift flour, bicarbonate soda and matcha and add to 2.
  4. Bake for 15 minutes or until set.
  5. Mix the jam and coconut milk for frosting.
  6. When the cake is completely cool, decorate with the frosting. Shift Maquiberry powder. Add toppings like freeze dried raspberry, fresh blueberries and chopped pistachio.
