Miso is a paste made by fermenting soybeans with salt and koji, a type of yeast produced by Aspergillus oryzae. This yeast is known to aid digestion and support gut health.
In Japan, Miso soup has been a staple food and the health benefits of Miso has been given a spotlight. It is also trendy to have Miso soup in a lunchbox!
Shinsyu refers to Nagano prefecture where the famous Snow Monkeys live. Wild mountains have provided well balanced water essential for production of Miso. I am so proud to add that I am from Shinsyu, called Nagano. You might be familiar with the name as it hosted the winter Olympic games in 1998.
